Making your own desserts is a great way to control your sugar intake and to also incorporate healthy superfoods into your diet.
Natural ingredients that can be used to add sweetness include Rice Malt Syrup and Stevia.
Rice Malt Syrup is a natural sweetener made from fermented brown rice. It has a rich flavour with a mild sweetness. It is a blend of complex carbohydrates (glucose and maltose) making it a slower releasing source of energy.
Stevia is a natural plant derived sweetener and does not contain any sugar at all. It is incredibly sweet (300 times sweeter than sugar) so you don’t need to add much, plus it doesn’t contain any calories.
Making Chia Puddings is an easy way to get started with your own healthy desserts. Try this recipe and feel free to experiment and modify with natural ingredients of your liking.
Choc Chia Pudding
Chia seeds are packed full of protein, fibre, antioxidants and omega 3 fatty acids. When soaked in water they expand up to 9 times their original size, making you feel fuller.
- 1 1/2 cups of almond or coconut milk
- 1/3 cup chia seeds
- 1/4 cup unsweetened cacao powder
- 1 tbsp avocado or nut butter
- 2 tsp rice malt syrup or 1/4 tsp stevia (alternatively use 2 tsp of maple syrup or honey)
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla extract
You can modify the recipe according to how sweet you’d like the flavour or how thick you’d like the consistency. Other ingredients that can be incorporated to provide extra sweetness include sweet potato, coconut oil and nuts.
Add the ingredients to a blender and blend until completely smooth and creamy, scraping down the sides as needed. Pour into mason jars, glass containers or other small jars and cover. Refrigerate overnight or for at least 5 hours so they form a thick pudding-like consistency.
Top with fruit, nuts, granola or coconut cream to serve.
